At cocktail parties or as hors d'oeuvre this cheese dish is a winner. At Christmas this hors d'oeuvre is very festive and it takes just a few minutes to put together. If you have a large crowd about about 12 guests, you may want to make two.
I buy the most delicious red pepper jelly from a store in the middle peninsula called Ware Neck Store. They have wonderful soups, and sandwiches to go, and of course red pepper jelly.
1 (7-oz) wheel of brie
¼ cup red pepper jelly
½ cup fresh raspberries
½ cup fresh raspberries
½ t grated lemon rind
Crackers for serving
Extra raspberries, for garnish
Preheat oven to 350 degrees F.
Place a sheet of parchment on a small rimmed baking dish and place cheese on parchment.
In small bowl, combine the red pepper jelly, raspberries and lemon rind.
Using a fork, smash up the berries.
Spoon the red pepper mixture onto the center of the cheese.
Bake until cheese is warm and melted, about 15 minutes.
Remove from parchment with a spatula onto a serving plate.
Arrange crackers all around and place a few raspberries on top and on plate for garnish.
Serves 4 to 6
