My mom made delicious coleslaw and my husband remembers how much he loved it. I still call this Izetta's coleslaw. It's perfect served on a pulled pork sandwich or a Sloppy Joe.
½ medium carrot, finely shredded or finely chopped
Dressing
¼ cup mayonnaise
¼ cup whole buttermilk
1 T apple cider vinegar
1 T lemon juice
3 T granulated sugar
1 t yellow mustard
½ t celery seeds (optional)
¼ t sea salt
Pinch fine ground black pepper
Place shredded or chopped cabbage and carrot in a large bowl.
In a small bowl, mix together the dressing ingredients.
Pour over the cabbage mixture and stir to combine.
Cover and refrigerate for at least 3 hours or overnight.
Stir again before serving.
