3 large eggs
¾ cup granulated sugar
1 T all-purpose flour
1 t pure vanilla extract
½ cup heavy cream or half-and-half or buttermilk
¼ t sea salt
½ cup unsalted butter, melted and slightly cooled
1 cup sweetened shredded coconut
Preheat oven to 350 degrees F.
In a large bowl, whisk together the eggs and sugar.
Add the flour, vanilla, cream or half-and-half, and salt.
Slowly whisk in the melted butter.
Fold in the coconut and pour the mixture into the unbaked pie crust.
Bake 50 to 55 minutes.
