Chicken salad is a perfect summer time lunch or light supper. What can be easier than to buy a rotisserie chicken, shred it and make the dressing?
Diced dried cranberries and chopped pecans can also be added.
1 store-bought rotisserie chicken, about 2 ½ to 3 lbs
½ cup good quality mayonnaise
3 T plain Greek yogurt or sour cream
1 T Dijon mustard
1 t sweet paprika
1 t garlic powder
2 stalks celery, finely diced
1 T fresh tarragon, chopped
1 T fresh lemon juice
Sea salt and finely ground black pepper
Snipped chives, for garnish (optional)
Croissants, sliced in half
Shred the meat from the chicken and place in a large bowl.
In a medium bowl, mix together the mayonnaise, yogurt or sour cream, mustard, paprika, garlic powder, celery, tarragon, and lemon juice.
Spoon into the bowl with the shredded chicken and mix together.
Season to taste with salt and pepper and gently mix again.
Cover and refrigerate at least 1 hour.
Serve on a bed of butter lettuce or croissants.
