GREEN BEANS WITH SHALLOTS, HERBS, & BUTTER

I found a couple of bags (8 oz each) of thin French green beans in the super market and the ends were already snipped off. This was such an easy and delicious way to prepare them. Anything with a little butter on it is always better!



1 lb thin green beans, trimmed, if needed
3 T unsalted butter
1 small shallot, minced
1 clove garlic, minced
2 T minced parsley
2 T minced tarragon
2 T minced chives
Sea salt and freshly ground black pepper
Lemon wedges, for serving

Bring a pot of water to a boil and add a teaspoon of salt.
Prepare a large bowl of ice water and set aside.
Boil the beans for 2 minutes, and then remove from water with a large spider or slotted spoon.
Plunge them into ice water.

In a large skillet, melt the butter over medium heat.
Add the shallot and sauté on low heat for a couple of minutes.
Add the garlic and sauté another minute.

Drain the green beans and pat them dry with a clean tea towel.

Add the beans to the skillet and sauté 2 minutes, while stirring.
Add the herbs and season with salt and pepper.
Sauté another minute and serve with lemon wedges.

Serves 4
