Do you remember that delicious dehydrated French Onion Soup that came in a box made by a big tea company? It was served with potato chips at many football parties and my mother also served it at her Christmas parties. I have to admit, I made it too back in the late 1960s and 70s. Have you ever read the ingredients list? Well, here is an equally delicious and healthier alternative. . .made with plain Greek yogurt. I know we aren't counting calories when we are eating this with potato chips, but you feel a little less guilty. My husband thought it was the old recipe made with sour cream. He was pleasantly surprised!
4 strips bacon, finely diced
4 strips bacon, finely diced
½ sweet onion, such as Vidalia or Walla Walla, very finely diced
2 cups thick plain Greek yogurt (you can use sour cream, if you prefer)
3 T dried onion flakes
1 t onion powder
½ t garlic powder
1 t beef bouillon granules
½ t sea salt
½ t fine ground black pepper
2 T minced fresh chives
In a skillet over medium-high heat, cook the bacon pieces until crisp.
Transfer to a medium size bowl and set aside.
Pour off most of the bacon grease and add the onion and cook over medium-low
heat for 5 minutes, stirring often. Transfer to bowl with bacon bits.
Stir in the rest of the ingredients and spoon into a serving bowl.
