HUMMUS WITH ROASTED BELL PEPPERS

Hummus is made from garbanzo beans, also known as chickpeas. One tablespoon serving is about 25 calories. The fats in hummus are primarily polyunsaturated and monounsaturated fats. It is low in sodium, packed with protein, and high in fiber, which keeps you full. This makes a delicious and healthy lunch or appetizer.



1 (15-oz) can garbanzo beans
2 T extra-virgin olive oil
2 whole roasted red bell peppers, from a jar, rinsed
5 T tahini 
2 to 3 T garbanzo bean liquid
Juice of 1 lemon
½ t sesame oil
1 clove garlic
1 t paprika
½ t ground cumin
½ t ground coriander
1 t sea salt
½ t fine ground black pepper
1 T of your favorite hot sauce 

Pour garbanzos into a strainer set over a bowl. Reserve liquid.
In a food processor or blender, add all of the above ingredients. 
Process until smooth and creamy. This can take 2 to 3 minutes.
If the mixture is too stiff, add a little more of the garbanzo liquid. 

Scrape into a serving bowl and serve.
