POMEGRANATE-ELDERFLOWER VODKINTINI

Elderflower liqueur is made from the small white flowers of the elderflower bush. These blossoms are handpicked and the liqueur is made with no preservatives. It has a delicate citrus and floral flavor. It is rather sweet and can be used to replace other sweeteners in cocktails, like simple syrup and agave. You can also add a little to sparkling wine or white wine.


POMEGRANATE-ELDERFLOWER VODKATINI
3 limes, cut one lime into wedges
3 T sugar
Ice cubes
8 oz vodka
4 oz elderflower liqueur (I used St Germaine)
4 oz pomegranate juice

Zest one lime into a small bowl with the sugar, stir to combine and set aside.
Using one lime wedge, cut a little slit in the flesh and rub around the rim of 4 glasses.
Dip glass rims into the lime and sugar mixture.
Place glasses in the freezer for at least 30 minutes.

Fill a medium-size pitcher half full with ice cubes.
Squeeze the juice from the other two limes into the pitcher.
Add the vodka, elderflower liqueur, and pomegranate juice.
Stir well to combine and pour into the prepared chilled glasses.
If you have a cocktail shaker large enough, use it instead.

Garnish with pomegranate seeds (if you have them) and a lime wedge.

You can also make this with cranberry juice and use cranberries, as a garnish instead of pomegranate seeds or just leave them out entirely. They do not enhance the flavor.
