CHINESE CHICKEN SALAD

If you want to lose some extra pounds and eat healthier during the spring and summer months, I suggest you try this delicious salad with rotisserie chicken.  This salad fills you up without feeling guilty.


Dressing
2 T avocado oil
2 T less sodium soy sauce
2 T brown sugar
2 T rice vinegar
1 T grated ginger
1 t chili paste
1 t sesame oil
1 clove garlic, grated
Grated zest and juice of 1 lime

Salad
2 cups chopped rotisserie chicken 
1 cup finely sliced Napa cabbage
1 cup finely sliced romaine lettuce
1 cup finely sliced purple cabbage
½ cup frozen shelled edamame, thawed
½ cup matchstick carrots
3 scallions, thinly sliced
½ red bell pepper, thinly sliced
½ cup toasted sliced almonds
½ cup peanuts, roughly chopped
½ cup chopped fresh cilantro leaves
1 T toasted sesame seeds (white or black)
1 cup crispy chow mein noodles

In a glass measuring cup, whisk together the dressing ingredients and set aside.
In a large bowl, combine all of the salad ingredients, tossing until well combined.

Whisk the dressing ingredients again and pour over the salad.
Toss to combine and serve immediately.
