DECADENT BROWNIES

When we lived in Washington, DC, every year we would go to Wolf Trap Farm Park in Fairfax County, Virginia to see various performances.  Prior to the show, we'd have a picnic in the field and I would always take these brownies.  I never had to bring any back home with us. . .they were that good!


½ cup unsalted butter
1 cup semi-sweet chocolate baking chips 
½ cup bittersweet chocolate baking chips
1 T espresso granules (optional)
1 cup granulated sugar
2 t vanilla extract

¾ cup all-purpose flour
½ t baking powder
½ t sea salt
¼ cup unsweetened cocoa powder
2 large eggs, whisked


Preheat oven to 350 degrees F.

Butter an 8-inch square pan.
Line the bottom with parchment, leaving a 2-inch overhang on both sides, and butter the parchment.

In a heavy large saucepan, over medium-low heat, melt the butter.
Remove from heat and stir in the chocolate and espresso granules (if using).
Set aside to let chocolate melt, stirring occasionally.
Stir in the sugar and vanilla and let sugar melt.

In a small bowl, whisk together the flour, baking powder, salt, and cocoa powder.
Using a wooden spoon, stir the whisked eggs into the chocolate and butter mixture.
Add the flour mixture and mix again. 

Spoon into the prepared pan.

Bake for 25 minutes. 

Let cool for 20 minutes before cutting into squares.
