EASY PEACH COBBLER

Nothing says summer more than peaches.  This is a simple way to make a delicious peach cobbler.  Frozen peaches are always picked when perfectly ripe.


1 bag (16 oz) frozen peach slices, mostly thawed
¼ cup brown sugar
4 T unsalted butter 

1½ cups all-purpose flour
¾ cup granulated sugar 
2 t baking powder
1 t ground cinnamon
¼ t ground nutmeg
¼ t sea salt 
¾ cup whole milk

Preheat oven to 375 degrees F.

Pour peaches into a bowl, gently stir in the brown sugar and set aside.

Put the butter in a 10-inch cast iron skillet or baking dish.
Place in oven for about 2 to 3 minutes to melt. 

Meanwhile, in a medium size bowl, mix together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt. 
Add the milk and mix together.

Remove baking dish from oven and evenly add the peaches and any juice to the pan, over the melted butter.
Spoon the dough by large rounded tablespoons over top of the peaches..

Bake in oven for 35 to 40 minutes, until golden brown.

Serve warm with vanilla ice cream.
