DADDY'S WESTERN HAM & EGG SANDWICH

When my dad was in his mid twenties, he would take the train from Arcola, Virginia to Anacostia in Washington DC to work in his aunt and uncle's diner. He later ran a diner in Quantico, Virginia.
He loved to cook and especially loved to make Sunday breakfast. This was one of my favorite breakfasts that he made for me and my sister.



1 T unsalted butter
2 T diced onion
¼ cup diced green bell pepper
¼ cup diced cooked ham, preferably Virginia ham
3 large eggs, beaten
Salt and freshly ground black pepper
2 slices of bread, toasted 

In a round oven-proof skillet, melt butter and sauté the onion and bell pepper until soft, about 5 to 7 minutes.
Add the ham and beaten eggs.
Season to taste with salt and pepper and cook another 3 to 4 minutes.
Either flip the egg mixture over and add back to pan or place under the broiler a couple of minutes to cook the top.

Makes one large sandwich that can be shared by two. . .or not!
