Avocados are an extremely good source of healthy fats. They are also high in Vitamins K, C, B5, B6, E, and high in folate, and potassium. This makes a very satisfying and healthy breakfast or lunch.

2 ripe avocados, flesh scooped from shell
1 clove garlic, pushed through a press or finely minced (optional)
Zest and juice of ½ lime
3 scallions, minced
2 to 3 T minced cilantro leaves
Pinch of chipotle powder or your favorite chile powder
Pinch of cayenne pepper

Sea salt

2 thinly sliced radishes, for garnish
2 round slices cucumber, thinly sliced, for garnish

In a bowl, coarsely mash the avocados with a fork.
Add the rest of the first ingredients and stir to combine.
Season to taste with sea salt.

Spread on toast of your choice and garnish with radish and cucumber strips.

Serve immediately.
