WHOLE WHEAT SEEDED BREAD

No one should be intimidated by making bread. This is such an easy and healthy bread to make. Add any seeds you prefer and you can make it with all whole wheat flour or try adding quinoa flour in place of the bread flour. It's fun to experiment and make this bread your own.


1 ½ cups lukewarm water
1 T active dry yeast
2 T honey
2 T grapeseed oil or avocado oil
½ cups whole wheat flour
½ cups unbleached bread flour
2 t sea salt
cup mixed seeds (chia, poppy, black & white sesame, flax, sunflower & pumpkin)

Place half of the warm water, yeast, and honey in the bowl of an electric mixer and let proof for 10 minutes, until bubbly.

Attach the bowl to the electric mixer fitted with the dough hook.
Add the rest of the ingredients and water.
Mix for about 5 minutes until the dough forms a ball.
Turn out onto a floured surface and knead for 3 to 4 more minutes.
Place dough into an oiled bowl, cover and place in a warm spot until doubled in sized, about 2 hours.

Oil a loaf pan and form dough into a smooth oblong shape.
Transfer the dough to the loaf pan and place in a slightly warm oven with a pan of boiled water and let rise until the bread rises about 1 inch above rim of loaf pan. This takes about 30 to 40 minutes.

Bake in a preheated 350 degree F oven for 30 to 35 minutes.


Cool on a wire rack for 10 minute and then transfer loaf to the wire rack and let cool completely before slicing.
